Brussels sprouts have a bad reputation, usually because they're boiled until soft. Roasted or pan-fried, they become crispy, sweet and delicious.

Prep

  • Trim the stem and remove any yellow outer leaves.
  • Cut in half so the flat side can brown.

Method 1: Roasted

  1. Toss halves with oil, salt and pepper.
  2. Roast at 220°C (425°F) cut-side down for 20–25 minutes until golden and crisp.

Method 2: Pan-fried with bacon

  1. Fry chopped bacon until crisp; remove.
  2. Fry sprouts cut-side down in the fat until browned.
  3. Add a splash of water, cover for 2–3 minutes to finish cooking.
  4. Stir the bacon back in.

Method 3: Shredded and sautéed

Thinly slice sprouts and stir-fry with butter, garlic and lemon zest for 4–5 minutes.

Flavour boostersFinish with a drizzle of honey or balsamic, grated parmesan, toasted nuts or chilli flakes.

Even sprout-haters often change their mind after trying them roasted.
