Building a gingerbread house is a classic holiday activity. Whether you bake from scratch or use a kit, the secret to success is strong "glue" and patience.

Kit or homemade?

Kits are quick and great for kids. Homemade lets you design your own shape. Either way, the assembly tips are the same.

Royal icing "glue"

Beat 1 egg white (or pasteurised egg white or meringue powder mixed with water) with about 250 g (2 cups) icing sugar until thick and stiff. It should hold a peak. Keep it covered so it doesn't dry out.

Assembly steps

  1. Pipe thick icing along the bottom and side edges of each wall.
  2. Stand walls on a board and hold together for a few minutes.
  3. Use cans or jars to support the walls while they set.
  4. Let walls dry for at least an hour before adding the roof.
  5. Attach roof panels and hold until secure.
  6. Leave overnight if possible before decorating heavily.
Stale is betterSlightly stale gingerbread is stronger. Bake pieces a day ahead and let them dry out.

Decorating ideas

  • Sweets and chocolate buttons for roof tiles
  • Pretzels for fences and windows
  • Icing sugar "snow" dusted over the top
  • Mini candy canes

Take photos — and decide together when it's time to eat it!
