Nothing beats a mug of real hot chocolate on a cold evening. Making it from scratch takes just five minutes and tastes far better than powdered mixes.

Ingredients (2 mugs)

  • 2 cups (500 ml) milk (any kind)
  • 60 g (2 oz) dark or milk chocolate, chopped
  • 1 tablespoon cocoa powder
  • 1–2 tablespoons sugar, to taste
  • A pinch of salt and a drop of vanilla

Method

  1. Warm the milk in a saucepan over medium-low heat until steaming. Don't let it boil.
  2. Whisk in the cocoa powder and sugar.
  3. Add the chopped chocolate and whisk until melted and smooth.
  4. Add the salt and vanilla, taste, and adjust sweetness.
  5. Pour into mugs and top as you like.
Pro tipWhisk vigorously just before pouring for a frothy, cafe-style top.

Topping ideas

  • Whipped cream and grated chocolate
  • Mini marshmallows
  • A sprinkle of cinnamon

Winter variations

  • Peppermint: add a drop of peppermint extract.
  • Orange: add a strip of orange zest while heating.
  • Salted caramel: stir in a spoon of caramel sauce.
  • Spiced: add cinnamon, nutmeg and a pinch of chilli.

Make a big batch for movie nights — it reheats well the next day.
