Yorkshire puddings are a must with a roast dinner. The secret to tall, crispy puddings is simple: equal amounts of batter ingredients and very hot fat.

Ingredients (makes 12)

  • Eggs, plain flour and milk in equal volumes (e.g. 1 cup each)
  • A pinch of salt
  • Oil or beef dripping

Method

  1. Whisk eggs, flour, milk and salt into a smooth batter. Rest for at least 30 minutes.
  2. Heat the oven to 230°C (450°F).
  3. Add about 1 teaspoon of oil to each hole of a muffin or Yorkshire pudding tin.
  4. Heat the tin in the oven for 10 minutes until the oil is smoking hot.
  5. Quickly pour batter into each hole, about a third full.
  6. Bake for 20–25 minutes without opening the oven.
Rule #1The oil must be very hot when the batter goes in. You should hear it sizzle.

Why they don't rise

  • The oil wasn't hot enough
  • The oven door was opened too early
  • Too much batter in each hole

Make ahead

Bake, cool and freeze. Reheat in a hot oven for 5 minutes until crisp.
